The cuisine of Morocco is known for its creative flavour combinations, traditional Moroccan spices and it’s fresh and exotic ingredients. It is a country full of flavours from the famous sweet mint tea and homemade biscuits, through to the savoury soups and stews.
We’ve put together a list of the top foodie experiences we think you shouldn’t leave Morocco without trying!
1. TAGINE
Tagine is a Moroccan speciality and an experience not to be missed! This slowed cooked meal (be it fish, chicken or vegetable based), is traditionally cooked in a heavy clay pot over an open fire or hot coals, providing the perfect hearty meal. This dish is named after the earthenware pot in which is it cooked, and if you want to do as the locals do, then grab a piece of bread and dig into this delicious shared meal.
2. COUSCOUS
Couscous are small steamed balls of semolina (durum wheat), usually served with a stew spooned on top. When couscous is cooked properly it has a light and fluffy texture, not gritty or gummy, it is the slow steaming process which ensures this. You can find couscous with a range of varying stew combinations from meat, vegetables, spices and sometimes even nuts and dried fruits such as plums.
3. HARIRA
This authentic Moroccan soup is a deliciously hearty meal often containing tomatoes, lentils, chickpeas, vermicelli and meat. This treat can be served up for lunch, or for a light dinner and is particularly prevalent during the month of Ramadan, when it is served to break the daily fast. The are many variations of Harira soup with recipes often being passed down, tweaked and refined through generations. This is one of our favourite Moroccan comfort foods.
4. MSMEN
Msmen are a real moroccan treat, these pancake like breads are recognisable by their distinctive square shape and often served at breakfast alongside fresh mint tea. Msmen can be served with honey, amlou and cheese or alternatively you can find savory alternative which are stuffed with meats or vegetables.
5. AMLOU
If you like peanut butter, then you will love Amlou! This traditional Moroccan dip and spread is made from argan oil, ground roasted almonds and honey, a dangerously delicious combination. Amlou is traditionally served with breakfast, often found alongside pancakes, pastries and bread.
6. AVOCADO & DATE SMOOTHIE
Morocco is rich with an abundance of fresh fruits and vegetables which means sourcing a smoothie spot out is never too hard to do! A classic smoothie combination here is the avocado, almond and date smoothie, a deliciously filling treat. One not to miss!
7. MOROCCAN MINT TEA
Moroccan mint tea, otherwise know as "Moroccan whisky"or "Berber Whisky" is the most commonly consumed drink. This tea, ritually prepared, poured and drunk on a daily basis, is a central part of social life and an important part of Moroccan culture, signifying friendship and hospitality. It's a must drink for anyone visiting, and a perfect post surf treat.
